Ingredients:
1 cup milk
1/2 cup water
1/4 cup unsalted butter (or SmartBalance Margarine sticks)
1/2 cup cane sugar
3 1/2 cups bread flour
2 packs Fleishman’s Rapid Rise Highly Active Yeast
1. Preheat oven to 450. Grease large glass bowl for rising dough.
2. Combine wet ingredients and sugar in a saucepan and bring to baby bottle warm. Add yeast to flour in a separate large bowl. Add milk slowly while kneading (you can use a bread mixer, of course, but I prefer my hands for this recipe).
3. Do NOT over-knead. Once combined, place in the large glass bowl for rising Cover and rise (at least 30 minutes, but the longer the better, so try for an hour). The mound of dough should be doubled in size before you retrieve it.
Tip: Clover rolls are delightful for pulling apart, Pull of a wad of dough and roll into a ball the size of a gumball, repeat 2 more times and place all 3 balls into one muffin slot. Repeat until entire batch is complete.
Place into pan to rise again (again, try for an hour).
5. Bake for 12 minutes or until golden & fluffy.
